Salvia leaves soaking in hot water to remove the bitter compounds

Note the blackening is due to the leaves not being completely covered with water and discolouring in places where they were in contact with the air as a result of this - only takes a few seconds to occur. doesn't really effect the taste though. Something to do with being unable to evaporate water to cool the leaf material? Maybe using slightly cooler water would avoid this.
